Guayaki Yerba Mate Vinaigrette Dressing
Springtime always excites me most when it comes to cooking. After a brutally long winter I nourish myself with fresh greens and light flavorful meals with a lot of color. A part of my belief to cook as waste-free and sustainable as possible, I’m a strong believer in making as much from scratch as you can. Especially when it comes to things like dressings, dips, and condiments of all kinds. That is why I am back with Guayaki Yerba Mate today to bring you this earthy and citrusy yerba mate vinaigrette perfect for all of your salads, and so much more. This super easy recipe takes no time to whip up and is beyond delicious. A perfect way to incorporate the benefits of yerba mate into more than just your beverages so you can come to life through the nourishment of your food.
1/4 Cup Brewed Guayaki Yerba Mate
1/2 Cup Oil of Choice
2 TBSP Apple Cider Vinegar (If you only have white vinegar on hand, you may need to increase the amount to about 1/4 cup)
1 TBSP Honey
2 TBSP Minced Red Onion
Fresh Herbs of Choice (I used some parsley I had on hand, but others options like chives, thyme, lemon balm, ect. would all be great)
1/4 Cup Lemon Juice or Two Lemon Peels
Spices of Choice To Taste- What I Used: Salt, Cracked Pepper, Turmeric, A Dash of Cinnamon, Garlic Powder
Makes approx. 1 cup
Brew your 1/4 cup of yerba mate and set aside to cool.
In a mixing bowl or jar, combine the ingredients one at a time. Red onion, oil, vinegar, cooled and strained mate, honey, lemon, fresh herbs and spices. I like to use a large mason jar so you can shake it for a few minutes to really combine the ingredients- but a bowl works just fine as well. Give it a good stir or shake for 1-5 minutes.
Test mixture and adjust any spices to taste. Let vinaigrette infuse for 2-6 hours.
Once infused fully, using a funnel + strainer transfer into another jar or container of choice (I love reusing glass bottles like a soy sauce bottle for dressings)
Serve on fresh salads, pastas, fish, and more to come to life during meal time.
