Yerba Mate Ice Cream With Guayaki

Summer is officially in full swing which means it is time to indulge in all the treats that are not only delicious, but keep us cool. Even better- looking for that perfect treat that is both delicious, healthy, and energizing? Then you have come to the right place because I’ve whipped up what will be your new favorite thing to keep stocked in your freezer during the warmer months (really, you could even eat this stuff for breakfast). Back with Guayaki Yerba Mate I bring to you this super fresh avocado yerba mate dairy-free ice cream recipe that has a ton of different ways you can customize it for your own personal preference (Oh, and did I mention you don’t need an ice cream machine?). Continue reading to find out how to make your own and let’s come to life together! I know this is what I’ll be eating all Summer long.

INGREDIENTS/SUPPLIES:

  • 2 TBSP Loose Leaf Yerba Mate or 1-2 Teabags Mate

  • 2 Cups Non-Dairy Milk Alt. (I’m using a homemade oat milk)

  • 2 Large Avocados

  • 1 cup pitted medjool dates or sweetener with alternative of choice like honey if desired, just start with 1/4 cup and sweeten to taste (the dates both sweeten and add a nice thickening agent)

Optional Ingredients

  • 1 TSP Vanilla Extract

  • 1/4 TSP Spirulina Powder or Serving of Mushroom Powder (like lion’s mane for added brain powder)

  • Toppings: Fresh Berries, Edible Flowers, Whatever Your Heart Desires…

DIRECTIONS:

  • The way I infused the yerba for this recipe was by using brewed mate in replacement of water when making a batch of oat milk. If you want to do what I did just google an oat milk recipe and replace the water with brewed yerba mate- if you are using a plant based milk that you are buying from the store just heat it up on the stove and brew the yerba in for 5 minutes. Strain and add to the remainder of this recipe.

  • Combine all ingredients into a blender or a large mixing bowl if using a hand blender like I am. Blend thoroughly until smooth.

  • Pour the mixture into a loaf pan, or freeze safe dish of choice (glass bowl, glass reusable carton… do those even exist?!) Top off with any toppings you desire and freeze overnight.

  • Let soften slightly (about 10-15 minutes) before eating and come to life with your delicious homemade yerba mate ice cream.
